apple pie surprise

Found this awesome recipe on another blog! can’t wait to try!

Apple Surprise Mini Pies
makes 12

Ingredients:

1 3/4 C. (1 package) Graham Crackers
1/3 C. butter, melted
24 oz. (3 pkg) Philadelphia Cream Cheese
3/4 C. sweetened condensed milk
2/3 C. white sugar
2 eggs
2 Tbsp. lemon juice
2 tsp. vanilla extract

3 cans apple pie filling

2 ready-made pie crusts (the kind that is just dough that you unwrap, or make your own)
12 half pint canning jars or ramekins
Drinking glass (a little larger than your jar lids), to cut out crust

Directions:
Place graham crackers in ziploc bag and crush.

Pour melted butter into baggie with graham crackers and shake to mix well. Place 2 heaping tablespoons of graham cracker mixture into bottom of a half pint jar and carefully spread around.
For cheesecake layer, beat cream cheese and sweetened condensed milk until smooth. Add sugar, eggs, vanilla, and lemon juice and mix well. Place 1/3 c. of cream cheese mixture into each jar.
Fill jars to the top with apple pie filling (about 1/2 C).

Unroll pie crust. Find a drinking glass or round cookie cutter that is about 1/2" larger than your jar lid and cut out 4 circles. Re-roll remaing dough and cut out 2 more circles. Repeat with other pie crust. If desired, cut small slits or a little shape in the middle of your crust.
Place one cutout crust on each jar and pinch edges to resemble a pie crust. Finish with a light dusting of white sugar.
Place on a cookie sheet (just in case any of them leak, you don't want to clean that out of your oven!) and bake at 350 degrees for 35-40 minutes until pie crusts are browned.

Remove from oven. Tie a small ribbon around each jar, if desired, and serve. I can't wait to make these for our next sit-down dinner, they'd be adorable served to each guest for dessert!

San Francisco

For Deric’s birthday we decided to head to San Francisco for the weekend. We were up in Sacramento for my niece Natalie’s baptism!DSC_0379 DSC_0332 DSC_0352

I can not believe she is 8 already!!!! She was 4 when I lived in Sacramento with her.

 DSC_0576 my favorite restaurant Boudin’s. They have the best sourdough bread bowls EVER! and their Clam Chowder is pretty good too!!!DSC_0586 The Aquarium of the bay is awesome! Deric got to touch a bat ray and leopard shark and a sea cucumber and of course the start fish! he loved it! I didn’t touch anything!

Deric was disgusted with me that in the 2 times I had been to San Francisco I had never gone on them! Its a lot of fun. Its a lot better to ride the cable car than to walk the hills! a lot faster too!

we did drive down Lombard street. I didn’t take any pictures because it gets over pretty fast! I could never imagine driving down that everyday to get to my house!

DSC_0642 DSC_0668 Alcatraz. awesome tour. totally worth the money! I learned a lot from the 3 hours we were there. It was freezing when we were there. But it was a pretty cool experience.

we had a blast the two days in san Francisco!! such a fun city with a lot of interesting people!

weekends

I love long weekends, I feel like I get so much more done when I have one extra day.

After we went and hit a bucket of balls Deric and I came home and cleaned out both of our cars. Oh my goodness, we threw away so much trash and brought in so much stuff that shouldn’t have been in the cars. I found lots of missing shoes and clothes! It was awesome! But finding those missing clothes means doing lots of laundry. Which I have been. and also finding places for the random things in the car that shouldn't’ be there, but should be in the house. But I finally did.

We got our back patio sort of furnished. I decided to use things around the house that weren’t necessarily being used inside and put them outside! We put up Diesels fence outside so that he could be out there with us and soak in the wonderful weather we are having! He loves being outside, as long as there is sunshine, a nice fluffy pillow and some toys. He is in dog heaven out there! I put up some lanterns that we used at our wedding for some extra lighting and ambiance of course! They had been sitting in the corner of our room for a long time now. So glad to finally be using them!

Growing up with Wrinkles and Snickers (my parents dogs) I never once saw them go into the kennel willingly. Even to just sleep. So seeing Diesel do this often is hilarious to me. He rides in the car in the kennel and sleeps in there a lot. Wrinkles will still have NOTHING to do with a kennel. I also just love the funny ways that Diesel sleeps! He is so stinking cute!!!

I did something today that I have never done before in my life!!!

I went golfing. well… i hit golf balls into a lake.

Growing up in liberty lake you would think that I would know how to golf. But I don’t. But I am getting the hang out of it and actually enjoy just hitting a bucket of balls. It was a lot of fun. We went today with some friends from the ward! Emily and Alden and their super cute daughter Camille. We absolutely love the Lawrence's

Deric and Alden after a while were competing to see who could hit the boat they had out in the water first. Alden won. I believe he hit the boat twice! That is the window on our back porch. Luckily I wasn’t out there when the amazing golfer hit this hole in one, but it did scare the snot out of me. Golf balls breaking through Plexiglas is very LOUD!

Our new addition

Its a boy………. well a boy puppy!

We got a puppy almost two weeks ago now.

He even sleeps through the night in his own bed!diesel 035

well sometimes he gets to sneak a little snooze on our bed. like right now. he is snoring away on the bed!

at almost 3 months of age Diesel weights 5 lbs and is almost a foot long but only about 6 inches off the ground!!

Diesel is a purebred Dauschund. He has to different colored eyes. his left eye is brown and his right eye is a very light blue. He is red with a brown marbling.

We couldn’t be more excited about him! and love him so much already! and yes if you are wondering he is COMPLETELY spoiled.

Yes the rumors are true. Diesel does go to puppy day care. I did cry yesterday when i dropped him off. I was so worried that he wouldn’t like it and that he would get trampled by all the “bigger” small dogs. But he did wonderful and loved it! He loves being around other dogs and wrestles and plays just as much as the other dogs! Even for being by far the smallest dog in the room, he sure holds his own! He comes home from daycare and sleeps most of the evening and then sleeps all night long! He is wonderful!
